Vegan Bounty Bars

Makes: 8 servings

These bounty bars will blow your mind!!!

Bounty bars were my favourite treats when I was a child. These healthy version of the

nasty packaged treat, look the same and taste even better. They are made with healthy, all natural ingredients and are free of processed sugar.

Ingredients:

·      1cup unsweetened shredded/desiccated coconut

·      2tbps unsweetened coconut yogurt (I use @coyo)

·      1 tbsp organic maple syrup

·      1 tsp vanilla extract

·      1 tbsp coconut oil

For Coating:

·      100g 70% dark chocolate melted with

·      ½ tsp coconut oil

 

Method:

1.     In your food processor, add the unsweetened desiccated coconut and process for a couple of minutes or until finely shredded.

2.     Add all the rest of the ingredients except the ones used for coating and process again until they are well combined.

3.     Refrigerate the mixture for about 30’ before rolling them into bars.

4.     When the mixture is ready, take about 1 tbsp of it at a time and fold it into rounded rectangle bars until all mixture is used.

5.     Place them in a plate lined with foil paper and refrigerate for another 30’ or until firm.

6.     In a small bowl melt your preferred chocolate (for a lower in sugar treat use dark chocolate sweetened with stevia) with ½ tsp coconut oil using water bath or double broiler until completely melted

7.     Dip each coconut bar into the chocolate sauce flipping it over if needed to completely cover the bar and place it back onto the lined plate.

8.     Refrigerate your bars for at least another 30’ before serving!

9.     They are DELICIOUS!
